After training and working in one of the largest conference hotels in the United States, Fabio refined his craft in high-pressure environments where quality and consistency must coexist. That discipline, paired with his deep respect for nature and ingredients, defines his approach in every kitchen.
Now based on Australia’s Gold Coast, Fabio joins Chef Sebastiรกn Guiza to bring a new layer of flavor to the private dining experience. Together they blend global influences; Peruvian, Asian, Brazilian, Japanese, into personalized menus designed to tell a story.
